Easiest Ever Chicken and Black Bean Soup!

Being on the 21 Day Fix has opened my eyes to not only portion control and eating clean, but also to some awesome recipes. I’m featuring one of these here today, from my friend and fellow Beachbody coach Lauren Angulo. Drum roll please…

EASIEST EVER CHICKEN AND BLACK BEAN SOUP

Ingredients: 

2 WW* chicken breasts

2 cups of organic chicken broth (low sodium)

1 can of organic black beans (low sodium)

1 can of organic corn

Half a packet of taco seasoning

Directions:

Toss all ingredients in the crockpot or slow cooker for 4-6 hours on low. Enjoy!

*Weight Watchers: Lauren uses WW chicken breasts because they are pre-cut so you don’t have to deal with cutting off excess fat. Each one comes out to 4oz or one red container for those of you on the 21 Day Fix!

Add your mix of cheese and avocado using the blue container (a couple pinches of each) or sour cream and you’re set. If you want, you can also eat with tortilla chips (1 yellow or 1/2 cup)! However you mix it, it’s delicious!
